Nathan Gooding – Head Chef
Nathan has had the honour of cooking for such dignitary as the Queen and the Late Queen Mother at Edinburgh. He has worked under the guidance of Nico Ladenis at Fawsley Hall in Daventry and later moved to Risley Hall both establishments of two rosette status. Earlier in his career Nathan won ‘Young Chef of the Year’ with the company Sodexho and is currently aiming to enter 'Avenance - Chef of the Year'.


Mark Green – Sous Chef

At 22 years, Mark Green has graced some of the best kitchens in Derby. After working at Masa, Mark then moved to Darleys on the River at Darley Abbey, where Mark was soon to be given the opportunity of Sous Chef deputising for the Owner Head Chef. As well as having a flair for the sauce section he also has a cool hand for pastry. In 2006 Mark entered the Craft Guild of Chefs – ‘Young Chef of the Year award’ competing at regional level. He will be entering into the same competition this year.


Mark Emery – Chef De Partie

Just as a number of other Chefs before him Mark had taken the path of Front of House Manager before realising his heart was in the cooking and not the serving of good food. To start this move Mark worked at the Brassiere Restaurant at the Lakeside in Nottingham. Mark is no stranger to the University environment having worked at The University of Cambridge and The University of Nottingham. Paul Greensmith – Restaurant Supervisor

Paul was employed at the Loch Fyne Restaurant and one of Nottingham's oldest Restaurants Punchinello's. He was highly regarded by his employer Jonathon Bates for his quality customer service skills and in his time Paul has developed a growing number of followers that have continued to dine wherever Paul resides.


Virginie Lefebvre - Restaurant Supervisor

Since moving from Le Havre, the Normandy region of France in 1994, Virginie has gained many years experience in restaurants at various establishments including most recently The Village Hotel, which is part of the De Vere Group and has contributed immensely to the Hemsley success. Gini brings a French passion and charm that filters through to all our customers who dine at The Hemsley.
